YOUR BONDI PAVILION

Speaker: Brett Robinson, partner in restaurant T/A The Bucket List

We want to preserve the 1920 heritage design but make sure it is modified and upgraded to provide for the expectations of people in 2016.

We also want to make sure to make sure that the beach and beachgoers are connected and integrated with the Pavilion.

Big considerations include protection from the southerly wind, rain, and harsh sunlight in a ground level weather proof space, so Bondi Beach can be experienced metres from the sand.

The Bucket List was built from our understanding of what beachgoers want, and we have had to accommodate a very diverse demographic from mothers’ groups with prams at 11am, young families enjoying early dinner, tourist of all ages from around the globe, by the bus load, and our locals.

We now believe the Bucket List, its menu, its service style and its location on the ground level is one of the best points for beachgoers, families and locals to connect with the Pavilon.

We consider that we are one of the most experienced commercial operators in the Pavilion, and as a result we want to work closely with Council to ensure the new tenancy designs provide spaces that will best satisfy the demands of local residents and beachgoers.
